Our Wine
The Prolific Cabernet is from 100% Cabernet Sauvignon grapes sourced from our estate vineyard in Los Gatos, CA. The wine is produced according to the old-world method with special attention to each step of the wine-making process: grape selection, fermentation, pressing regimens, barrel selection, and aging to produce a rich, textured, and balanced wine that respects its terroir. The grapes are hand-selected and carefully picked to avoid damage to the fruit, and immediately rushed to the winery for processing. The wine is handcrafted and aged 18-24 months in Oak barrels imported from France. It is then further aged for at least another 12 months in the bottle before being released. The Wine Maker
We are fortunate to have a partnership with Denis Hoey. Denis is the owner and operator of Odonata Wines. Denis was the only winemaker we needed to interview; we met Denis and his family one afternoon in his Santa Cruz Tasting Room. He explained his winemaking philosophy and techniques; we sampled about ten different varieties of wines and sparkling wines he crafted – which were all great! His passion for making wine was evident, and we immediately knew that he was the one to craft our Cabernet Sauvignon. Denis combines the old methods with new world techniques for creating rich, textured and balanced wines.
